“Winning Gold twice was proof that we are onto a winning formula in terms of delivering the ultimate brownie experience,” says George.
The secret to a good brownie
According to George and Caroline, a good brownie is unique in texture, flavour, and appearance. Judging criteria at the Fine Food Show is centred on mouthfeel and texture, flavour and aroma, bake quality and technical skill, as well as visual appeal. However, Caroline believes the secret to a perfect brownie is a perfect balance between fudgy in the middle and flaky on top.
“There are lots of pastries out there that are called “brownies” but they are not a true brownie,” says Caroline, who has spent years passionately developing and mastering her recipes to create brownies worthy of obsession.
Brazen Brownies has the largest range of brownies in Australia including a range of gluten free varieties. They even hand make their inclusions like peanut butter and hazelnut chocolate ganache, rather than using manufactured nut butters and pastes.
Their commitment to Australian made is reflected in their careful sourcing of only the best and highest quality ingredients, including free range eggs from a local farm, nuts from the Sunshine Coast in Queensland, walnuts from Tasmania, and only real Australian butter, rather than margarine or oils.

They’re the perfect ‘little luxury’ for everyone because they’re totally unfussy and unpretentious. Also, most people aren’t afraid to get in the kitchen to whip up a tray, which is a big part of the appeal.”
